Sautéed Corn and Onions

Do not let the simplicity of this recipe fool you. I promise that you will be amazed that corn could ever taste so good. I stumbled across this recipe quite a few years ago. It’s now become a family staple, and the perfect accompanying side dish to almost any main course.

The original recipe calls for fresh corn, but I typically stick with frozen corn simply for availability year-round.

It really is best if the corn and onions get to caramelize, so make sure you give yourself enough time for that to happen!

Sautéed Corn and Onions

Servings: 4 servings

Ingredients

  • 2 tbsp butter
  • 2 tbsp vegetable oil
  • 4 cups frozen corn
  • 1 small onion diced
  • pepper and seasoning salt to taste

Instructions

  • Heat butter and oil in a skillet over medium heat. Sauté corn kernels just until tender, then mix in onion.
  • Increase heat to medium-high. Continue sautéing until corn and onions start to brown, stirring frequently.
  • Season to taste with salt and pepper and serve.
