Homemade Goldfish Crackers

There are certain foods with which I have absolutely no self-control. Twix bars are one. These are another. We actually had to put these away last night because neither of us could stop eating them. How sad is that.

You know those cheese buns you can buy in the grocery store? That’s what these taste like. Except fresher, and fluffier, and decandent-er. More like the crusty bits of cheese you pull off those tasty buns!

The best part is that these were so easy to make. The dough is simple and they bake beautifully. I copied the cutouts from the original recipe, which were also fairly simple to make. Just use an aluminum can, and a little bit of tape to hold it together, and voila!

Ingredients:
8 ounces cheddar cheese (preferably sharp), shredded
1/4 cup chilled butter, cut into cubes
1 cup flour
¾ teaspoons salt
2 tbsp cold water

Directions:
1. Pulse everything (except water) together in the food processor until the dough resembles coarse sand. Pulse in water, 1 tablespoon at a time.

2. Remove dough from the processor, wrap in plastic, and chill for 20 minutes.

3. Preheat oven to 350°F.

4. Roll out the dough to 1/4″ thickness and cut into desired shapes. You can use a toothpick to make the eyes and smile if desired. Place on a parchment paper lined cookie sheet.

5. Bake in preheated oven 15-20 minutes, or until crispy.

Yield: Approx. 7 dozen crackers
