Black Bean and Corn Chili

Ingredients

large onion
chopped

cloves
garlic
minced

lean ground beef

8 ounce can diced tomatoes, with juice
1/4
cup
tomato paste
1
bay leaf
1
tsp
cumin
1
tsp
oregano
1/4
tsp
cayenne pepper
1
tablespoon
chili powder
1
cup
beef stock
1
14 ounce can black beans, drained and rinsed
1
cup
frozen corn kernels
salt and pepper to taste
Instructions
In a large pot over medium-high heat, brown your beef. Add onions and garlic and fry with meat until soft.
Stir in tomatoes, tomato paste, seasonings and stock and bring to a boil.
Reduce heat to low, cover pan and simmer for 1 hours, stirring occasionally.
Stir in beans and corn and simmer 20-30 minutes.
Discard bay leaf and serve.
