Fresh Tomato Salad

Last week, I picked up a variety of tomatoes on the vine from our local grocery store. I hadn’t bought orange and yellow ones before and was super excited to try them out. One thing led to another, and I still hadn’t had the chance to use them. I was making a heavier pasta dish a couple nights ago and wanted a really fresh, light side to go with it. I came up with this – perfect for a summer night.

I’m pretty sure orange tomatoes on the vine are my new favorite food. So yummy!

Fresh Tomato Salad

Servings: 2 servings

Ingredients

  • 1 shallot diced
  • 3 tomatoes on the vine preferably mixed colors
  • drizzle extra virgin olive oil
  • drizzle balsamic vinegar
  • 1 tsp chopped fresh basil
  • freshly ground salt and pepper to taste
  • 1/2 tbsp freshly shaved Parmesan cheese

Instructions

  • Mix shallot, tomatoes, olive oil, vinegar, basil, salt and pepper together in a small bowl. Top with Parmesan.
