Grilled Asian Chicken

I’ve been making this recipe ever since I left home. It was one that I copied out of my Mom’s recipe books, and I have no idea where the original recipe is from. I’ve seen many similar recipes, but none quite exactly like this.

This is an ideal “last minute” dinner because you only need to marinate the chicken for 15 minutes. That’s my kind of meal!

The original recipe calls for chicken breasts, but all we had on hand tonight were thighs, which were equally delicious!

The picture is not up to par, but hubby said, “You’d better make it quick!”, so I only took one, instead of my usual 18 shots. As in pictures. Not alcohol. I would never.

Grilled Asian Chicken

Ingredients

  • Ingredients:
  • 1/4 cup + 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1/3 cup honey
  • 4 slices fresh ginger root or 1/4 tsp ginger powder
  • 3 cloves garlic minced
  • 6 boneless skinless chicken breasts (or 12 boneless, skinless chicken thighs)

Instructions

  • In a small microwave-safe bowl, combine the soy sauce, sesame oil, honey, ginger, and garlic. Heat in microwave on medium power for 1 minute, then stir. Heat again for 30 seconds.
  • Pour soy sauce mixture over chicken breasts in a shallow dish or bowl, and marinate in the fridge for 15 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil grill grate.
  • Cook chicken on the prepared grill 5 to 8 minutes per side, or until no longer pink and juices run clear. Baste frequently with remaining marinade.
