Coconut Oatmeal Cookies

Who doesn’t love coconut oatmeal cookies? If you don’t, maybe you should go see a doctor. Coconut oatmeal is definitely my favorite, and this recipe is delicious. A warning – you really have to work with the dough, as it tends to be on the dry side. But look at it this way – it’s a really great workout for your arms!

Because the dough is so hard to work with, these are definitely not overly pretty cookies, but believe me – the taste makes them SO worth it.

Coconut Oatmeal Cookies

Ingredients

  • 1 cup butter or margarine softened
  • 1 cup white sugar
  • 1/2 cup brown sugar lightly packed
  • 1 egg beaten
  • 1 1/2 cup oatmeal
  • 3/4 cup coconut
  • 1 1/2 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda

Instructions

  • Preheat oven to 350°F.
  • Combine flour, salt, baking powder, and baking soda together in a small bowl. Set aside.
  • Cream butter or margarine and sugars together in large mixing bowl.
  • Beat in egg.
  • Stir in oatmeal and coconut.
  • Stir in flour mixture.
  • Roll dough into walnut sized balls (this is where you'll need to get vigorous and work out those muscles!) and place on lightly greased baking sheet. Press down gently with a fork.
  • Bake at 350°F for 15 minutes.
