Brown Rice With Vegetables

This dish is a great accompaniment to any type of fish. I love how fresh and healthy tasting it is. If you’re a typical “white rice” type of person, give brown rice a try – you might be pleasantly surprised.

Brown Rice With Vegetables

Ingredients

  • 1 cup brown rice plus 2 cups vegetable stock cook or steam rice
  • 1/2 cup zucchini cubed
  • 1/2 cup red pepper diced
  • 1 cup fresh mushrooms roughly chopped
  • 2 green onions green and white parts diced
  • 1 tbsp butter
  • dash of dill
  • lemon juice

Instructions

  • Sautee veggies in a large skillet in olive oil over medium heat until tender.
  • Add cooked/steamed rice to skillet and cook 5 minutes.
  • Add butter, lemon juice, and dill, and stir well.
