Oil & Vinegar Dressing

Everyone needs a delicious, classic oil and vinegar dressing for their recipe box. This is mine. Except it’s not actually mine.

This is a recipe that a dear old friend shared with me years ago. She always kept a big batch in the fridge and I remember the first time I had it on a salad with lettuce from her garden. I couldn’t believe what I was tasting – classic, but so much better than your typical vinaigrette.

To this day, I’m still not sure what makes this oil and vinegar dressing so special, but “special” is exactly what it is. It might be the brown sugar or the fresh ground pepper but most likely it’s the garlic. Copious, unrestrained, irresponsible amounts of garlic.

But don’t be afraid. The garlic is all balanced out with a perfect sweet/acidic/mellow combination that will make your heart (and mouth!) as happy as mine is every time I eat it.

Every time I serve this oil and vinegar dressing for guests, I get asked for the recipe. It’s that good. Trust me.

Oil & Vinegar Dressing

Servings: 1 cup

Ingredients

  • 1/2 cup + 2 tbsp canola oil
  • 1/4 cup white vinegar
  • 2 cloves garlic minced
  • 3 1/2 tbsp brown sugar
  • 1/2 tsp salt
  • freshly ground pepper to taste

Instructions

  • Mix all ingredients together and serve on your favourite salad.
  • Store in refrigerator for up to 2 weeks. Shake well before serving.

Notes

Canola oil allows the dressing to remain liquid while stored in the refrigerator.

    I’ve made this dressing, and love it. In the summer when we have lots of garden lettuce, I make a batch and keep it in the fridge.
