Butter Tart Squares

What’s almost as good as homemade butter tarts? Homemade butter tarts in square form! Actually, it could be argued that the squares are better because they’re way less hassle and yet still so tasty. But that’s up to you to decide!

Recipe courtesy of The Gourmet Housewife’s Mom aka “GH’s Biggest Fan“.

Ingredients:
1/2 cup butter
1 cup flour
2 tbsp brown sugar, packed
2 eggs, beaten
1/2 cup brown sugar, packed
1/2 cup rolled oats
1/4 tsp salt
1/2 tsp baking powder
1 tsp vanilla
1/2 cup chopped nuts (optional)

Directions:
1. Preheat oven to 350°F. Lightly grease an 8×8 inch square pan.

2. Mix together butter, flour, and 2 tbsp brown sugar. Press into prepared pan. Bake for 15 mins in preheated oven.

3. Mix remaining ingredients together and pour filling over baked bottom layer. Bake for 20 mins in preheated oven. Serve warm with a scoop of vanilla ice cream!

Yield: 9 servings
