Kale Chips

Okay now I’m really back!! Miss me? We’re all moved in and unpacked, and we just got back from a weekend at the lake, and after I’m done my 18 loads of laundry, I’ll be right back into the swing of things.

P.S. There was snow at the lake. Snow. In June. Remind me again why I don’t live in Mexico?

On to the good stuff! One of my best friends posted on her Facebook about some kale chips she had made. As you know, I’m always looking for healthy snack options, and these intrigued me. Before I had the chance to make them, I went to her house and tried some. Oh my.

She sprinkles hers with crushed chili flakes, and I made mine with seasoning salt. But there are tons of different varieties out there that you can try. When I was searching, I found some with salt and vinegar, some with paprika and cayenne, some with Parmesan and Asiago. I plan on trying them all.

 

Kale Chips

Servings: 2 cups

Ingredients

  • 1 bunch kale
  • 1 tbsp extra virgin olive oil
  • 1/2-1 tsp seasoning salt

Instructions

  • Preheat oven to 350°F. Lightly grease a baking sheet or line with parchment paper.
  • Wash and dry kale. Cut away inner stems and discard. Tear into bite-sized pieces and place in a large bowl.
  • Drizzle with olive oil and sprinkle with salt. Toss with your hands to mix. Spread out on prepared baking sheets.
  • Bake for 15-20 minutes or until desired crispiness.
