Bran Graham Muffins
What to do on a rainy day? Bake muffins of course! Hubby is going on a fishing trip up north today, and when we were getting the groceries he needed to bring with him, he was going to buy some pre-made muffin mix. He said, “You can get a pretty good blueberry/cranberry bran mix”. And then I looked at the package he picked out. And I’ve had those. And while they may be passable for a 19-year-old bachelor, I just couldn’t in good conscience let him buy it.
Because I have this recipe:
It’s delicious. It’s healthy. And best of all, it’s homemade.

Ingredients:
3 cups bran
3 cups graham cracker crumbs
1 1/2 cups + 2 tbsp flour
3/4 cup brown sugar
3/4 cup wheat germ
1 tbsp baking soda
3/4 tsp salt
1 1/2 cups raisins
3 eggs
1 cup oil
3/4 cup molasses
2 1/4 cup buttermilk
1 1/2 tsp vanilla
Directions:
1. Preheat oven to 375°F. Lightly grease muffin tins.
2. Measure all dry ingredients into a large bowl. Mix in raisins.
3. In a medium-sized bowl, beat eggs until frothy. Add oil, molasses, buttermilk, and vanilla. Beat to mix. Pour over dry ingredients. Stir just to moisten.
4. Spoon batter into prepared muffin tins, filling them right to the top.
5. Bake for 20 minutes.
Yield: 2 dozen
