Bran Graham Muffins

What to do on a rainy day? Bake muffins of course! Hubby is going on a fishing trip up north today, and when we were getting the groceries he needed to bring with him, he was going to buy some pre-made muffin mix. He said, “You can get a pretty good blueberry/cranberry bran mix”. And then I looked at the package he picked out. And I’ve had those. And while they may be passable for a 19-year-old bachelor, I just couldn’t in good conscience let him buy it.

It’s delicious. It’s healthy. And best of all, it’s homemade.

Bran Graham Muffins

Servings: 2 dozen

Ingredients

  • 3 cups bran
  • 3 cups graham cracker crumbs
  • 1 1/2 cups + 2 tbsp flour
  • 3/4 cup brown sugar
  • 3/4 cup wheat germ
  • 1 tbsp baking soda
  • 3/4 tsp salt
  • 1 1/2 cups raisins
  • 3 eggs
  • 1 cup oil
  • 3/4 cup molasses
  • 2 1/4 cup buttermilk
  • 1 1/2 tsp vanilla

Instructions

  • Preheat oven to 375°F. Lightly grease muffin tins.
  • Measure all dry ingredients into a large bowl. Mix in raisins.
  • In a medium-sized bowl, beat eggs until frothy. Add oil, molasses, buttermilk, and vanilla. Beat to mix. Pour over dry ingredients. Stir just to moisten.
  • Spoon batter into prepared muffin tins, filling them right to the top.
  • Bake for 20 minutes.
