Connor’s Cookies

My Grandma just sent me a recipe that she wants me to post. Our son is the first grandchild, and first great-grandchild in the family, so he’s getting spoiled, and she’s even named these cookies after him!

I’ve tried these, and they’re absolutely delicious!

Connor’s Cookies:

Ingredients:
1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup butter, softened
1 cup white sugar
2 tsp vanilla
1 cup oatmeal
1 cup chopped pecans

Directions:
1. Preheat oven to 375°F (165°C). Line a baking sheet with parchment paper.

2. In a bowl, mix the flour, baking soda, and salt. In a separate large bowl, mix the butter, 1 cup confectioners’ sugar, and vanilla until the mixture is smooth and creamy. Stir in the flour mixture; gently stir in the oatmeal and pecans and lightly mix until combined.

3. With a spoon, drop about 1 scant tablespoon of dough per cookie onto the prepared baking sheet. Bake in the preheated oven until lightly browned, about 20 minutes.

[*Notes: They are a bit crumbly but difficult to keep on hand. Guaranteed to be a favorite if your family loves oatmeal cookies.]
